Crockpot French Chicken

6 boneless skinless chicken breast halves
2 (14.5 oz.) cans Italian-flavored tomatoes, undrained
2 (15 oz.) cans white kidney beans, drained
1 lg. yellow pepper, cut in strips
1 tsp. oregano
1 tsp. dried basil
1 tsp. minced garlic
1/2 tsp. salt
1 T. olive Oil

Mix all ingredients in crockpot. Cook on low 6 to 8 hours. Before serving, stir in 1 tablespoon olive oil.

Creamed Cucumbers

3 English cucumbers, sliced thin
1 pt. sour cream
1/2 to 2/3 c. sugar
Salt and pepper

Combine cucumbers and salt and pepper. Allow to sit for a while, then drain liquid. Mix in sour cream and sugar to taste.
